The last photo appears to be one mighty fine & elegant mill. For a more homely example, I went back to an ancient MR and a mill scratchbuilt by George Allen: Mifflinburg Mill. Alas, when I visited Mifflinburg years ago I could not find the structure. But, anyway, here is a couple of elevations. Anyone highly motivated to go build it may contact me and I'll provide all the drawings.

That lean probably came from carrying those old mail bags.
The guy in the middle is either a retired postman or the postmaster who worked his way up.

Regarding the mill rope, doors and human stature:

Using Mitch's 6" clapboard siding ruler, the the shortest figure (looks to be a female wearing a bonnet) measures 5 feet. I understand people were shorter in those days. Also, there were no child labor laws, so children were often employed in industry.

The doors were loading and unloading doors for things like bags of wheat or corn, or in Rex's image maybe coal. They look high enough to get a millstone through. Did the stones go out for shaping occasionally?

Sometimes the ropes were hauled up via connection to the drive shaft coming up from the water wheel down at basement level. This appears to be the case in Rufus's image (no visible pulley like we see in Rex's image.)

The grain is lifted in sacks onto the sack floor at the top of the mill on the hoist. The sacks are then emptied into bins on the top floor, where the grain falls down through a hopper to the millstones on the stone floor below. The flow of grain is regulated by shaking it in a gently sloping trough (the slipper) from which it falls into a hole in the center of the runner stone. The milled grain (flour or corn meal) is collected as it emerges through the grooves in the runner stone from the outer rim of the stones and is fed down a chute to be collected in sacks on the ground or meal floor.

The terms "gristmill" or "corn mill" can refer to any mill that grinds grain, the terms were used historically for a local mill where farmers brought their own grain and received back ground meal or flour, minus a percentage called the "miller's toll."

Liverpool station leans to the right and the people lean to the left. What's with all this leaning in Liverpool?
Are they leaning against some force (except the guy bracing himself on the crane)? Did the force eventually push the building over?
