In Philly and you're buying a Philly cheese-steak...you're buying the brand. That said, I can't seem to make a cheese steak sub at home that tastes anything like what I get at the local greasy spoon. Same with a hot pastrami on rye...convinced it can't be done on the kitchen stove.

I don’t miss sports. I probably said that before. I feel no emptiness from the lack of sports.


We've never been big on eating out and the few times we did in the past year we've been creeped out by the staff workers we can see, so we can only imagine who's doing the cooking. Had a nice little chain "The egg & I" we ate breakfast at once in a while. Clean, efficient, meals were always good and no surprises. Last time we went, the waitress staff had changed, service was poor, food didn't taste the same and the tatoo'd and nose ringed girl at the cash register was disgusting. They don't need my business.

We cook at home.

Meat needs to be really thin, almost shaved, and it needs to be pre-heated. You can't take it out of the fridge and toss it on the griddle. My wife likes Rueben's and I've had to use the microwave to pre-heat/warm up some of the components. I will even lightly toast the rye bread to get it so it's not cold and sucking the heat out of everything else I am trying to cook. Warm up the kraut, warm up the corned beef, lightly toast the bread. I make my own dressing using ketchup, mustard, and pickle relish and I make sure it's at room temperature before final assembly/grilling. BTW, it helps to have an inverter based microwave where you really are dialing down the power level and not just modifying the time the magnetron is actually energized.

There is a good chance that the meat they are using has a higher fat content that what you would buy for yourself.

Cheese steak is a little harder but having the roll warmed up is a good start. Meat should also not be right out of the fridge. I tend to grill the onions and peppers first and then add the meat (which had marinated in Worcester sauce) and add the cheese last. The greasy spoons also tend to tent the "stuffing" to make sure it's all hot.

When we used to go out as a group with relatives I would bow out to go to the rest room and then I would stop on the way back to the table to watch the chef's preparing food. J Alexanders is a southern style grille and they NEVER put meat on the grille cold. It was always partly cooked and held in steam baths so the last 5-10 minutes on the grille was to "finish it off". This was primarily done for chicken and pork, beef was just allowed to rest to near room temperature.

I've found the best way to "grille" chicken is to microwave it on a very low setting (10-20% power) for something like 20-30 minutes. I would turn it at 10 minute intervals and check the internal temp. Once it hit 150 I'd take it out and put it on the grille at a low to medium setting and get the skin crispy and get some nice grille marks.

100 today 94 tomorrow, likely the last 100 till next year.
I got something stuck in my throat last night and it lasted till this morning. I have had chocking before but this was different, I could drink, eat, breath, talk but it was quite painful and wouldn't move.
I thought I was going to have to go to urgent care which I dreaded as thats most of the day but it finally moved. I didn't feel it move, I just realized it's gone.

Do you think it might have been an insect or spider, which sometimes see open-mouths as enticing?

I received a text-message on my cellphone , today, from the nearby CVS , which is where we have had our prescriptions filled for years. They invited me to go there immediately to get a flu shot. Should I ?

A flu shot is almost mandatory under these circumstance unless you intend to become a true hermit for the next 16-18 months. I don't know about the local CVS as a source for one but you should be looking/thinking about it. While they are pretty sure about the transmission specifics for COVID 18, the current candidates for the upcoming flu season may be different. If you stay masked, wash your hands regularly and keep distancing yourself you should be in good shape. Big IF is if you do get the flu is whether an a followup exposure to COVID 19 will become a deadly issue. I have passed on flu shots for most of the last 25 years with one exception. That one exception wound up with the my coming down with the worst case of the flu I had in the previous 25 years. I am not blaming the shot per se. It could have been I let my guard down because I got the shot or more likely the vaccine wasn't anywhere near as effective as it was supposed to be (flu mutated or CDC guessed wrong on the strain).

BTW, I'm not sure about CVS being the best place to get the shot. Normally I'd head back to my former employer but that's probably a hot bed of Covid right now. I'll have to think about it.

My long time friend is a CVS pharmacist. They are 100 percent capable of giving you a shot. With most doctors offices not doing wellness visits. Local pharmacy will be doing more vaccinations and flu shots. CVS had him complete a refresher course. Most of that time was spent on vaccination education. He gives more flu shots than a nurse. He works in a inner city where people trust the pharmacist not a doctor.

Flu shot is free if your on a medicare advantage plan, I get one every year. Still get the flu every other year.

Thanks for the insight. Most of or local CVS's are more like 7-11's that also have a pharmacy attached. I wish the pharmacists were running the place. Our Wallgreen's seem to be more/better organized. We can get flu shots at Kroger as well. Not sure about that either.

My former employer was a major university with a major health care system. They would set up mini clinics in some of the common's area's around campus and have 5-6 nurses and a couple of paper chasers to help with the forms/screening. I am pretty sure that they aren't doing any of that with the Covid restrictions.
